Do we have documents which listed the URLs to be whitelisted if AnythingLLm (docker) is running behind proxy?

We do not, since they vary on what you are using. I will say whitelisting cdn.anythingllm.com and hf.co/huggingface.com will handle 99% of the outbound issues since that is where we store/pull/mirror model files
