Added functionality for custom s3 endpoints and a Dockerfile following the existing Opencode image publish patterns. I had a selfhost version of the functions previously which used Apache OpenDAL as the storage layer, more than willing to convert the enterprise package to use that for more flexible storage options.

This should be ready to deploy with the existing CICD.
