Problem

The Docker compose files reference the plugin daemon image tag 0.5.1-local, which is now outdated compared to the current plugin daemon release.

Motivation

Keeping the compose definitions aligned with the current plugin daemon image avoids version drift and reduces the risk of mismatched behavior for self-hosted deployments.
