Summary

This pull request involves the removal of the PGUSER environment variable across multiple configuration files in the docker directory. The changes streamline the environment variable setup by relying on POSTGRES_USER instead, which simplifies the configuration and reduces redundancy.

Removal of PGUSER environment variable:
