Summary

Fix #27847
Add WEAVIATE_GRPC_ENDPOINT as designed in weaviate migration guide.

This suits cases for users using weaviate-helm, where cluster domain for http endpoint and gRPC endpoint are different as identified in #27833.

Schema is allowed in this implementation, e.g.:

WEAVIATE_GRPC_ENDPOINT=grpc://weaviate:50051
WEAVIATE_GRPC_ENDPOINT=grpcs://weaviate:443
