Classic298 3495ed1d59 Document v0.10.2 configuration additions

Adds env reference entries for the config surfaces introduced in 0.10.2: OLLAMA_API_CONFIGS and OPENAI_API_CONFIGS (per-connection JSON configuration for Ollama and OpenAI-compatible backends, keyed by connection index), and AUDIO_STT_OPENAI_API_REQUEST_FORMAT (multipart vs base64 JSON audio for OpenAI-compatible speech-to-text). Also documents the previously-undocumented EVALUATION_ARENA_MODELS variable alongside ENABLE_EVALUATION_ARENA_MODELS.
