Eli Stewart dc4dd9b165 fix: V2 extract examples, split lint fixes, delete stale V1 examples ...

- Add extract_v2_end_to_end.py and extract_v2_manual_polling.py
- Delete stale V1 extract examples (client.extraction removed in 2.0)
- Fix split.py: add missing Iterable/SplitCategoryParam imports,
  fix SplittingStrategy -> ConfigurationSplittingStrategy,
  wrap categories in configuration= for create() calls
- Fix split_manual_polling.py to use configuration=
- Format test file per ./scripts/format
- Remaining 6 pyright errors are pre-existing classifier deprecation
  warnings in Stainless-generated code
