Is there a timeout mechanism in place? If a client is attempting to connect to a server, will it just give up and go into 'offline' mode at any point? I was trying Golf with your Friends, which works perfectly by the way when connecting to the server, but launching without the server running it hangs on loading. Is there a setting I can change to fix this?

I would need to check what kind of callbacks are being issued by official GOG Galaxy and compare it against what UniverseLAN is doing, by default it should present the connection as not logged / offline.

On very rare occasions it will make it through but it usually just hangs at the windmill animation unless the server is up.

Children of Morta is the sort of the same but in a different way. When launching without the server running to communicate to it, enemies just stay alive after being technically reduced to 0 hp. Functions fine if there's been a response by the server. You may have more of an idea about that one than I do.

Edit: This is a non-issue for this title. I mistakenly believed it was co-op but that's Steam only.
