Check out text files with LF on every platform

With Git for Windows' default core.autocrlf=true, fixtures and snapshots
check out with CRLF and the snapshot tests fail. A .gitattributes with
`* text=auto eol=lf` keeps LF in the working tree everywhere. Every
committed text file is already LF, so nothing needs renormalizing.
