AGENTS.md: drop the counts that go stale

The harness, probe, Game field, impl file and module counts had drifted
(324 harnesses against 502 on disk). Nothing regenerates prose, so name the
things and let the tree give the numbers. CONTRIBUTING.md's "about 290"
harnesses goes with them.
