docs: fix dead snapcraft confinement link in README (#2840)

The docs.snapcraft.io/snap-confinement/6233 URL now 404s (the docs site was
restructured under snapcraft.io/docs). Point the strict-confinement note at the
current snapcraft.io/docs/snap-confinement page, which returns HTTP 200.

Verified: old URL -> 404, new URL -> 200 (followed redirects).

AI assistance disclosure: this change was prepared with the help of an AI
assistant; the link-target research and verification were done by the human
author.
