docs(ghidra): count 27 read-only operations in current guides (#7794)

The inventory registry gained read_binary_inventory_summary, so the
read-only inventory is fifteen inventory and twelve function operations.
Update the adapter summary and the Windows lane descriptions to match the
registries the Windows verifier derives its coverage from. The historical
Windows verification record keeps its observed 26-operation count.

Fixes #7611
