Adrian Lyjak 7bc7207a36 document-parsing: bump llama-cloud pin to v2 (#251 )

Update llama-cloud constraint from >=1.3.0,<2 to >=2.3.0,<3.
Workflow already uses v2-shaped parsing API (expand=["markdown_full"],
result.markdown_full) since #250; only the pin was still on v1.

Bumps document-parsing version 0.1.3 -> 0.2.0.
