system: iOS default backend restored to GL

Also fix the mistake where "gl" backend did not map to the right GL in iOS.
Switching the default backend back to GL is due to regression of issues such
as `glxgears` not working for some people.
Although Metal backend for iOS should perform better overall, regressions
such as this can cause confusion and so we will make the Metal backend now
opt-in instead of opt-out
Resolves #4856
